Carrot mango smoothie

Well my friends, let's talk about how I went on an elliptical for 30 minutes last week + then I got sick the very next day. I believe I am 100% allergic to exercise. And my menu has been all of those sick comfort foods: mom's chicken matzah ball soup, warm tea with honey + lemon, plus lotsa ice cream.

Now I'm on the other end of those icky vibes + all I want are vitamins, so this smoothie is on the menu. It has tons of mango, a bit of orange juice + creamy greek yogurt. Plus carrots, which are kind of killer in juice so why shouldn't they belong in smoothies too?

So buzz this up next time you want something refreshing, cold-fighting + overall just delicious. Serving this in wine glasses is a bonus, so do it!

Carrot mango smoothie

  • 6 carrot sticks (~1-2 small carrots)

  • 2 cups frozen mango

  • 6 oz. plain greek yogurt

  • 1/2 cup orange juice

  • Pinch of turmeric

  • 1 teaspoon honey

  1. First soften the carrots by combining them with a splash of water in a microwave-safe bowl. Microwave the carrots for one minute. They might hiss while in the microwave, but no worries! Drain the water from the carrots.

  2. Combine the carrot, mango, greek yogurt, orange juice, turmeric + honey in a blender. Blend to combine. You might have to push the mixture around a bit. If it's too thick, you can add a splash of milk to thin the smoothie.

  3. Pour the smoothie into two glasses + top with another pinch of turmeric for fun.
