I’m not a huge fan of tuna fish to be quite honest, but this recipe, well it finally made me excited about it. I mean, this tuna salad is packed with bacon! Need I say more?

The bacon is crisped up in the oven which will become you’re new favorite way to make bacon if you aren’t already on the oven bacon trend. One of my least favorite chores is cleaning my stovetop so I absolutely love this hack for perfect bacon. Other than that all you need is a little lemon, mayo, and if you’e feeling fancy, tahini. Lunch is served!

Bacon tuna salad on toast

Ingredients

  • 8oz. package sliced bacon
  • 5 oz. canned tuna
  • Juice of 1/2 lemon
  • 2 teaspoons mayo
  • 1 teaspoon tahini
  • 4 slices sourdough
  • 1/2 packed cup arugula
  • A handful of micro greens

Instructions

  1. Pre-heat your oven to 375°F. 
  2. Lay the bacon in one layer on a foil-lined baking sheet. Bake the bacon in the oven until crisp, about 13 minutes.
  3. While the bacon is cooking, drain your tuna and flake it up with a fork in a large bowl. Mix in the lemon juice, mayo, and tahini. Season with red pepper flakes, salt and pepper to taste. Set aside.
  4. Toast the sourdough to your liking. Split the arugula and tuna salad amongst the toasts. Crumble the bacon on top, saving any extra for later or a snack, and finish with a sprinkling of micro greens and red pepper flakes.
